Soft shell crab is not a specie of crab. The crab is soft as it is at the stage of ‘shedding’ meaning they just molted their old exoskeleton. As they shed the hard shell, the whole body is soft.
After removing the mouthparts, the gills and the abdomen, the whole crab can be eaten. It is a delicacy mostly consumed in Japanese cuisine. Often deep fried and consumed as a side dish or wrapped in a handroll.
