Red Leg Prawn, scientifically known as Fenneropenaeus indicus, is generally wild caught from the sea.
Texture of prawn meat is bouncy and crunchy. Taste is mild and sweet. The shell of prawn is thinner and is ideal for stir-fry.
The size of the prawn is dictated by the number of prawns per kg. In this case, 30/40 means that there are 30 to 40 prawns in 1 kg. Hence the smaller the number, the bigger the prawn.
